3 pounds Yukon Gold potatoes, unpeeled, washed and sliced into 1/4- inch thick ovals
1/4 cup (1/2 stick) unsalted butter
8 ounces cooked ham, coarsely chopped
1/2 cup shallots, finely chopped
2 teaspoons garlic, finely chopped
1/4 cup all purpose flour
2 cups half and half
1/4 teaspoon salt
1 teaspoon pepper
1 cup fresh chives, finely chopped
2 cups freshly grated parmesan cheese
Garnish with fresh chopped chives if desired

Directions:

Preheat oven to 350 degrees F.

Add sliced potatoes to a large pot of boiling water and cook for 10 minutes. Drain potatoes and set aside.
