Pound Cake with Sweet Vanilla Ricotta and Berries

Yield: Serves 8


1 container (15 oz.) fat free ricotta cheese
2 Tablespoons granulated sugar
1/4 teaspoon vanilla extract
1 loaf pound cake
1 pound strawberries, sliced
1/2 cup blueberries


Blend ricotta with sugar and vanilla extract.

Slice pound cake into eight slices and place on eight plates. Spoon ricotta mixture equally over cake and top with sliced strawberries and blueberries.
