Skinny Mashed Potatoes

Yield: Makes about 6 servings

Preparation Time: 10 Minutes; Cook Time: 15 minutes


5 large potatoes, cut into 1-inch pieces (about 7 1/2 cups)
2 cans (14 1/2 oz. each) SWANSON Chicken Broth (3 1/2 cups)
generous dash pepper


In medium saucepan place potatoes and broth. Over high heat, heat to a boil. Reduce heat to medium. Cover and cook 10 minutes, or until potatoes are tender. Drain, reserving broth.

Mash potatoes with 1 1/4 cups broth and pepper. If needed, add additional broth until potatoes are desired consistency.

“I was surprised how easy these were to make and how good they were with just chicken broth and pepper! Be careful when adding the chicken broth to mash the potatoes. It may not take as much as noted depending on the size of the potatoes used.”
