Chocolate-Chocolate Chip Muffins

Yield: 1 dozen


1 1/2 cups flour
1/2 cup granulated sugar
1/4 cup unsweetened cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup orange juice
1/4 cup water
1/4 cup (4 tablespoons) melted butter
1 Tablespoon white vinegar
1 teaspoon vanilla extract
1/2 cup semisweet chocolate chips


Preheat oven to 375 degrees F

Spray a 12 cup muffin tin with nonstick cooking oil.

Stir together flour, sugar, cocoa, baking soda and salt in a large bowl.

In a small bowl, whisk together orange juice, water, butter, vinegar and vanilla. Pour into flour mixture and stir just until flour is moistened. Stir in chocolate chips.

Spoon into muffin cups.

Bake 18 minutes, or until the top springs back when gently touched.

“Easy recipe. I added 3/4 C. semisweet choc. chips. I also think it needs a frosting. I chose cream cheese frosting and added chopped Walnuts to it. The muffins were so good and were a hit at my tea meeting. But next time, I decided to make it a whole cup of Choc. Chips, instead of 1/2 C. Also, I will try the nuts in the muffin instead of the frosting. Bon apetite !”
