Ham and Asparagus Brunch Bake

2 boxes (6 ounces each) long grain and wild rice original recipe
1 pound asparagus, cut into 1- inch pieces (about 2 1/2 cups)
2 cups chopped ham
1 cup chopped red or yellow bell pepper
1/4 cup finely chopped red onion
1 cup (4 ounces) shredded Swiss cheese

Preheat oven to 350 degrees F and coat an 11 x 7 1/2- inch baking dish with nonstick cooking spray.

In large saucepan, prepare rice mixes according to package directions, adding asparagus during the last 5 minutes of cooking.

Remove rice mixture from heat. Add ham, bell pepper and onion; mix well. Place mixture in prepared baking dish; sprinkle with cheese.

Bake 25 to 30 minutes or until mixture is heated through.

Time Saver:
This dish can be prepared ahead of time. After sprinkling on the cheese, cover with foil and refrigerate several hours or overnight. Preheat oven to 350 degrees F. Bake, covered for 15 minutes. Remove foil and continue to bake until heated through, about 15 minutes longer.
