Garlic Carrots

2 Tablespoons olive oil
1 pound fresh baby carrots
2 cloves garlic, minced
1/4 cup water
1/4 teaspoon thyme
1/4 teaspoon pepper
1/8 teaspoon salt


In a large skillet, saute carrots for 4 minutes, stirring occasionally.

Stir in garlic and saute for 1 minute.

Add water, thyme, pepper and salt; bring to a boil.

Reduce heat; cover and simmer for 8 to 10 minutes or until carrots are tender.

“A wonderful recipe! Carrots were nice and tender - I actually used an extra (small) clove of garlic. My husband isn't a big fan of carrots, but he really enjoyed these -- they don't really even taste like carrots! =-)”
