1 medium cucumber, seeded and diced
1 small sweet onion, thinly sliced
1 1/2 Tablespoons olive oil
1/4 teaspoon salt
1/4 teaspoon black pepper
1 can (14.5 ounce) diced tomatoes, drained
Romaine Lettuce leaves
